Perfect Gravy for 'gravy & biscuits'

  • 3 tablespoons solid vegetable fat
  • 1 egg
  • 4-1/2 tablespoons flour
  • 2 cups milk
  • Salt and pepper to taste
Melt vegetable fat in skillet, and when hot, add the well beaten egg, and stir over the heat until light brown color. Add the flour, and continue to stir until a nice brown; then add one third of the liquid, and stir until smooth and free from lumps. Add the remainder of the milk, boil up, salt and pepper to taste, and serve.

Yields enough to cover about 5 biscuits.
