Chicken Salad

--ingredients:
  • 2 cups cut up cooked chicken
  • 2 Tbsp. lemon juice
  • 2 cups chopped celery
  • 2 Tbsp. instant minced onion
  • 1 cup croutons
  • 1/2 tsp. salt
  • 1 cup mayonnaise
  • 1/2 cup shredded cheddar or swiss cheese (2 oz.)
  • 1 cup crushed potato chips
  • 1/2 cup chopped almonds, toasted
--instructions:
Heat oven to 450. Mix all ingredients except cheese and potato chips. Spoon into 6 ungreased 1 cup baking dishes. Sprinkle with cheese and potato chips. Bake uncovered for 10 - 15 minutes or until bubbly. Serves six.
